Calcium sulphate, also known as Burton salts, is a mineral additive used in brewing and beverage production for water quality regulation. The product increases permanent water hardness and helps lower the pH level of the mash, which is essential for optimal fermentation process.
Principle of use: Calcium sulphate is added to brewing water to adjust its mineral composition according to the requirements of the beverage being produced. It is particularly common in the production of English-style ales, where higher water hardness enhances hop bitterness and gives the drink its characteristic flavour. The product is also suitable for improving water quality in winemaking and cider production.
Recommended dosage for water treatment: 12 g per 25 litres of water. The exact amount depends on the initial mineral content of the water used and the desired end result.
