Cider Kit Mangrove Jack's 2.4kg (Elderflower & Lime)
Usage: The Mangrove Jack's Craft Series Elderflower and Lime cider kit is designed for home cider making. The kit contains high-quality fruit juice concentrate, cider yeast (M02 Cider) and sweetener, allowing you to produce up to 23 litres of fresh-tasting cider. In addition, 1kg of dextrose is required for fermentation, as well as extra dextrose for re-fermentation (7g per litre).
Features: The flavour profile combines fresh citrus lime notes with warm floral elderflower nuances, blended with a fruity apple base. The kit allows you to adjust the sweetness to your preference: for dry cider, do not add the sweetener sachet; for off-dry, add half the sachet; and for sweet cider, use the full sachet. The finished cider has a pale yellow colour and an approximate ABV of 5.2%.
Preparation principle: Cider making begins with thorough cleaning and sanitising of all equipment. The fruit concentrate is poured into the fermenter, 3 litres of boiling water and 1kg of dextrose are added, and the mixture is stirred until fully dissolved. Cold water is then added to reach a total volume of 23 litres, and the temperature is checked to ensure it is between 18-28°C. Fermentation begins once the yeast and optional sweetener are added. It is important not to add the cider essence until fermentation is complete. The fermenter must be fitted with a lid and an airlock filled with water.
Fermentation takes at least 6 days at 20-25°C. Lower temperatures will extend the fermentation period, and below 15°C the process will stop entirely. The end of fermentation can be verified with a hydrometer, with readings at 0 or below on two consecutive measurements 24 hours apart. After fermentation is complete, the cider essence is added, stirred in, and left to clear for 24 hours. The cider is then racked off the sediment into a clean vessel, dextrose dissolved in hot water (7g per litre) is added, and the cider is bottled into sanitised pressure-resistant bottles. The bottles are kept at room temperature for 5 days, then moved to a cooler location. After a few days, the cider is ready to drink.
