Usage: Yeast cell wall extract (mannoproteins) rich in sweet peptide fraction and vegetal polysaccharides (arabic gum) for wine maturation and preparation prior to bottling. Contributes to wine stabilisation by preventing potassium bitartrate salts precipitation.
Features: 100% soluble powder with immediate action. Improves smoothness in red and rosé wines, balancing acidity and bitterness. Can be used during wine maturation with or without lees.
Technical data: Dosage: 10-30g/hL (100-300ppm). Humidity: 8%. Ashes: 8%. Total Nitrogen: 4-7g/kg. Polysaccharides: 350-600g/kg. Colour: creamy white. Full solubility in water.
Warnings: Good filtration management necessary. May cause blur in charged wines (IC > 50). Add before prefiltration bottling in such cases. Store in dry, odour-free area at moderate temperature. Use within 2 years. Do not use opened packaging.
