Professional Convection-Steam Oven for Commercial Kitchens
Body and baking chamber made of AISI 304 stainless steel; embossed chamber with rounded corners for easy cleaning. Glass door, 2-layered, with gravity ventilation, hinges on the right-hand side, with a blockade when opened to 60°, 90°, 120°, 180° for safe operation; possibility to order the oven with hinges on the other side. Drip tray for condensation with a drain in the door.
Advanced Control and Performance
2 fans with auto-reverse function, with 3 speeds (min. 1500 RPM, max. 2800 RPM). Steam production: direct spray, 10 degrees (0-100%), electronically controlled. Touchscreen control panel (Thin Film Transistor) – coloured, 7-inch. All parameters and functions are indicated with numbers or icons. 1-point core probe ensuring constant control over baking and cooking parameters. Regulated feet for ideal oven levelling.
Cooking Modes and Functions
Cooking/baking in 3 modes: convection, steam, convection-steam (combi). Possibility to control the condensation hood and growth chamber from the level of the control panel. Automatic cleaning system in 4 programs: eco, standard, intensive, rinsing.
Additional functions: Preheating (chamber preheating by +30˚C more than the set temperature), Multilevel (possibility to cook various dishes in the same conditions, at different times of heat processing), Holding Cabinet (keeping the cooked dishes at a serving temperature), Cool Down (fast cooling down of the chamber to enable quick change of the currently cooked product), Proofer (the oven also serves as a proofer).
Patented Technologies
Cooking with DELTA T function: cooking with a probe for keeping a constant difference between the temperature inside of a product and the temperature inside of the oven. This helps to avoid the impact of too high temperature on a product.
Patented Tecnoeka systems: Airflowlogic™ (re-designed deflector for improving air circulation; it enables even baking on every level), Humilogic™ (water sprayed behind the fan ensuring high humidity level with less water consumption; not only reduces water consumption, but also brings our natural flavour and aroma from the dishes).
